Vodka made with reclaimed lobster shells launched

A culinary vodka made with reclaimed lobster shells that is designed for Bloody Marys, as well as cooking, has been launched.

Lobster Vodka, which is a 40% ABV release, represents the latest product launch to showcase an increasing consumer demand for unusual flavours.

The vodka is also the second coastal expression from Bold Coast Spirits, which aims to build on the brand’s mission to capture the character and flavours of Maine’s coast in the USA.

According to the business the new release, which is available in a 355ml bottles, has a “pronounced, savoury lobster character with buttery notes”.

“There is so much flavour left in a lobster after the meat has been picked, and that was really the starting point for us,” explained Jay Lombard, co-founder of Bold Coast Spirits.

“We wanted to find a way to save that flavour and give it another life. The result is something that feels equally at home on a bar top or in the pantry.”

According to Luke’s Lobster, which supplied the shells, only about 20–25% of a whole lobster’s weight is typically eaten. After the meat has been picked, the shells still hold a rich flavour.

Bold Coast, they said, captures that remaining flavour in a shelf-stable culinary spirit, giving the lobster more use beyond the plate.

The release follows the debut of Oyster Shell Vodka, Bold Coast Spirits’ first exploration of “merroir,” or the idea that the Maine coast can shape the character of a spirit.

Oyster Shell Vodka is rested on reclaimed cracked oyster shells from Maine oyster farms, lending the finished vodka “subtle minerality, texture and a long, dry finish”.
